Description
A sweet banana and brown sugar flavored cookie filled with chocolate chips and sprinkled with sea salt. This banana bread chocolate chip cookie is soft, chewy and moist, just like banana bread. It gets extra bonus points for being super easy to make too!

- 1 medium ripe banana
- 1/4 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 1/3 cup granulated sugar
- 1 egg yolk*
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 tablespoon sea salt crystals
Instructions
- Preheat the oven to 350° and line a baking sheet with parchment paper. Set aside for later.
- Chop up 1/4 cup of your 1 cup of chocolate chips. Set aside for later.
- In a medium bowl mash one ripe banana. Mine was medium in size. Add in butter and sugar. Mix until well combined.
- Add in egg yolk and vanilla. Mix until just combined.
- In the same bowl, add in flour, baking soda, cinnamon and salt. Mix until you no longer see streaks of flour.
- Fold in the remainder of the chocolate chips.
- This is a sticky dough. You’ll want to use some sort of cookie scoop or spoon to help you make your dough balls. Put 6-8 dough balls on your prepared baking sheet. Sprinkle the tops of the dough balls with your chopped chocolate. Pat the chocolate down ever so slightly without flattening the dough ball.
- Bake the cookies for 11-12 minutes or until the edges of your cookies start to turn a light golden color. The cookies will continue to bake while cooling. Do not over bake.
- Remove the cookies from the oven. Immediately sprinkle with sea salt crystals (this step is optional). Allow them to cool on the baking sheet for 10 minutes before moving to a wire rack or parchment paper.

Notes
- A ripe banana is the key to this recipe. I like to let mine get pretty brown.
- You can totally skip the chopping of the 1/4 cup chocolate chips and sprinkling them on top of the cookies if it’s to much of a hassle for you. I do this because it makes them look pretty and I love a pretty cookie. They’ll be wonderful with all of the chocolate chips just mixed into the dough. I promise!
- You can freeze the banana chocolate chip cookie dough. Flash freeze the dough balls on a baking sheet in a single layer. Don’t skip this step. It ensures that the dough balls won’t stick together. Once those babies are frozen throw them all together in an airtight container or a freezer ziplock bag. Now you have dough balls ready to make yummy cookies whenever you please!
