So what do I mean by easy to make? We’re talking about a ONE BOWL recipe here. That’s right, no need to dig out three different bowls and having it look like your kitchen blew up by the the time the cookies are finished baking. Not only that, this recipe is only 6 ingredients. Yes, you read that right… ONLY 6 INGREDIENTS! Even better, they’re likely ingredients that you have in your pantry right now. The main ingredient is a box of brownie mix. I mean how easy is it to cut open a bag and dump it into a bowl. This is my kind of recipe.

HOW TO MAKE EASY BROWNIE MIX COOKIES RECIPE
- Prepare. Preheat your oven and line a baking sheet with parchment paper or a silicon mat.
- Make the dough. In a single bowl, combine brownie mix, butter, heavy cream, and egg yolks. Mix. Add the flour. Mix until you no longer see streaks of flour. This will be a pretty thick dough. Add chocolate chips to the dough and mix until evenly distributed.
- Make dough balls. Use a cookie scoop or a spoon to make dough balls of about 3 tablespoons of dough. Roll the dough into balls with your hands.
- Bake in batches. Place 6-8 dough balls onto your prepared baking sheet and put them into the oven. You’ll know the cookies are finished when the tops of them start to look like brownies and the centers no longer look wet.

- Double the amount of eggs, but only use the yolks.
- Swap the oil for melted butter.

Can I freeze brownie mix cookies?
100% YES. You can freeze the cookies after they are completely cooled. I recommend flash freezing them in a single layer before stacking them in an airtight container to avoid them sticking together. You can also freeze the dough balls too. Same thing, freeze in a single layer prior to putting in an airtight container or ziplock bag. Pro tip: when you’re making brownie mix cookies double the ingredients. Then you can bake half like you were planning to and roll half into dough balls to freeze. Now you have dough balls ready to pull out of the freezer and bake for the next time you’re craving them. It’s a little more work now, so you have way less work later.
What kind of chocolate should I use in the cookies?
THE WORLD IS YOUR OYSTER!! Dark chocolate, milk chocolate, semi-sweet chocolate? Chopped chocolate? Chocolate chips? What’s your fav?! USE IT! I personally used dark chocolate because that’s what I love. The same thing goes for boxed brownie mix. They’re really isn’t any right or wrong answer here. If I’d have to guess, I’d bet that your family has a brand that you prefer. Use that! We love Ghirardelli in my house, so that’s what I used.

- 1 box brownie mix, your choice
- 1/2 cup flour
- 1/4 cup heavy cream
- 1/4 cup butter, melted
- 4 egg yolks*
- 1 cup chocolate chips
Instructions

Preheat oven to 350°. Line a baking sheet with parchment paper or a silicon mat and set aside for later.
- In a single bowl, combine brownie mix, melted butter, heavy cream and egg yolks. Mix. Add in flour. Mix until you no longer see streaks of flour. Add chocolate chips. Mix until evenly combined.
- Scoop and roll approximately 3 tablespoons of dough into balls. Place on a baking sheet and bake for 9-11 minutes. Mine turned out perfect at 10 minutes. You’ll know they are done when the tops get the crackly look of a brownie. The cookies will continue to bake while cooling. Do not over bake.
- Remove the cookies from the oven. Allow them to cool on the baking sheet for 15 minutes before moving them to a wire rack or parchment paper to finish cooling.
- Enjoy! They are absolutely scrumptious!
Notes
- The cookies will be pretty ooey-gooey and jiggly until they are completely cooled. It doesn’t mean that they aren’t under baked, it’s just because they are fudgy.
- When you start mixing all of the ingredients you may think “man this looks dry”. Be patient and trust the process. Continue to mix until a thick dough forms. I pinky promise it will!
